Description

This Sausage Tortellini Soup is a hearty and comforting dish perfect for a cozy night in. The combination of savory Italian sausage, tender tortellini, and flavorful spices in a creamy broth will warm you up from the inside out.


Ingredients

Main Soup:

    • 1 pound ground Italian sausage, hot or mild
    • 1 small yellow onion, diced
    • 3 cloves garlic, minced
    • 3 Tablespoons flour
    • 1 teaspoon dried basil
    • 1/2 teaspoon oregano
    • 1 pinch cayenne, optional
    • 1 teaspoon hot sauce
    • 1/2 teaspoon mustard powder
    • 1/4 teaspoon pepper
    • 1 pinch red pepper flakes
    • 1 cup heavy cream
    • 5 cups chicken broth

Additions:

  • 2 cups kale, chopped
  • 2 cups tortellini, just under 10 oz. (refrigerated or frozen)
  • Salt/ to taste

Instructions

  1. Cook Sausage: In a large pot, cook the Italian sausage, breaking it into pieces until browned.
  2. Add Aromatics: Add onion and garlic, cooking until softened.
  3. Create Roux: Sprinkle flour over the mixture, stirring until absorbed.
  4. Season and Simmer: Stir in basil, oregano, cayenne, hot sauce, mustard powder, pepper, and red pepper flakes. Pour in chicken broth and bring to a simmer.
  5. Finish Soup: Add heavy cream, kale, and tortellini. Cook until tortellini is tender. Season with salt to taste.
  6. Serve: Ladle into bowls and enjoy!

Notes

  • You can use either hot or mild Italian sausage depending on your preference for spice level.
  • Feel free to add more vegetables like carrots or celery for extra flavor and nutrition.
