These Savory Breakfast Pop-Tarts are a delicious and fun twist on the classic treat, filled with scrambled eggs, crispy bacon (or sausage), gooey cheese, and a buttery, flaky crust. They’re perfect for meal prep, easy to customize, and great for breakfast on the go! Make a batch ahead of time and reheat for a quick and satisfying morning meal.

For the Dough (Shortcut: Use Store-Bought Pie Crust or Puff Pastry)

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup unsalted butter, cold and cubed
  • 6 tbsp ice water

For the Filling

  • 4 large eggs, scrambled
  • 1/2 cup cooked bacon, crumbled (or cooked breakfast sausage)
  • 3/4 cup shredded cheddar cheese (or your favorite cheese)
  • 1 tbsp heavy cream (for egg wash)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt

For the Topping (Optional but Delicious!)

  • 1 tbsp melted butter
  • 1 tbsp grated Parmesan
  • 1/2 tsp dried parsley

Instructions

Step 1: Make the Dough (If Using Homemade)

  1. In a large bowl, whisk together flour, salt, and sugar.
  2. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add ice water, 1 tablespoon at a time, mixing until the dough just comes together.
  4. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.

(Skip this step if using store-bought pie crust or puff pastry.)

Step 2: Prepare the Filling

  1. In a pan over medium heat, scramble 4 eggs until just set. Season with salt, pepper, garlic powder, and onion powder.
  2. Stir in cooked bacon or sausage and shredded cheese. Set aside to cool slightly.

Step 3: Assemble the Pop-Tarts

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the dough on a floured surface to about ⅛-inch thick. Cut into rectangles (about 4×3 inches).
  3. Place 1-2 tbsp of filling onto half of the rectangles, leaving a small border around the edges.
  4. Brush the edges with egg wash (1 beaten egg mixed with 1 tbsp heavy cream) and place another dough rectangle on top.
  5. Press the edges with a fork to seal and poke a few small holes on top to allow steam to escape.

Step 4: Bake & Serve

  1. Brush the tops with melted butter and bake for 20-25 minutes, or until golden brown.
  2. (Optional) Sprinkle with Parmesan and parsley while warm for extra flavor.
  3. Serve hot with your favorite dipping sauce (maple syrup, hot sauce, or ketchup!).

Notes

  • Make-Ahead: Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
  • Reheat: Warm in the oven at 350°F for 10 minutes or in the air fryer for a crispy finish.
  • Customize: Add diced bell peppers, caramelized onions, or swap the cheese for feta or pepper jack!
