Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tbsp honey (or to taste)
- 3 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried oregano or thyme (or both)
Instructions
- Prepare the Chicken
Season the chicken breasts or thighs with a little salt and pepper. -
Make the Balsamic Glaze
In a small bowl, whisk together the balsamic vinegar, olive oil, honey, garlic, and dried herbs. Adjust sweetness by adding more honey if preferred. -
Add Everything to the Slow Cooker
Place the chicken in the slow cooker and pour the balsamic glaze over it, ensuring it’s evenly coated. -
Cook on Low or High
Cover and cook on low for 4-6 hours or high for 2-3 hours. The chicken should be tender and shred easily when done. -
Serve and Enjoy
Once cooked, shred the chicken and serve with the balsamic glaze drizzled over the top. Optionally, thicken the sauce by transferring it to a saucepan and simmering for a few minutes.
Notes
- Searing the chicken in a skillet for a couple of minutes before slow cooking can add extra flavor and caramelization.
- If using chicken thighs, cook them for 6 hours on low.
- Add a tablespoon of butter to the sauce for a richer flavor at the end of cooking.
