Ingredients
- Beef stew meat (or chuck roast, cut into cubes) – 1 lb (or 2 cups)
- Onion, diced – 1 medium
- Garlic, minced – 3 cloves
- Low-sodium soy sauce – 1/4 cup
- Beef broth – 4 cups
- Sesame oil – 2 tbsp
- Brown sugar – 1 tbsp
- Ground ginger – 1 tsp
- Ramen noodles (discard seasoning packets) – 2 packs
- Green onions (for garnish) – 2 tbsp, chopped
- Optional: Soft-boiled eggs, sesame seeds, or spinach for garnish

Sear the Beef
Heat a skillet with a little oil and sear the beef stew meat for 3-4 minutes per side. This step is optional but adds great flavor. -
Add Everything to the Slow Cooker
Transfer the seared beef to the slow cooker. Add the diced onion, minced garlic, soy sauce, beef broth, sesame oil, brown sugar, and ground ginger. Stir well to combine. -
Let it Cook
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors are well combined. -
Add the Ramen Noodles
About 20 minutes before serving, break the ramen noodles into smaller pieces and stir them into the slow cooker. Let the noodles soak up the broth and cook until soft. -
Serve and Enjoy
Once the noodles are tender, stir everything and taste for seasoning. Garnish with chopped green onions, sesame seeds, or a soft-boiled egg. Serve immediately!
Notes
- For a thicker broth, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) in the last 30 minutes of cooking.
- To make it spicier, add chili paste or red pepper flakes.
- Marinate the beef in soy sauce, garlic, and sesame oil for 1-2 hours to enhance flavor.
