Description

Looking for a cozy, flavorful meal with minimal effort? Look no further than these Slow Cooker Garlic Butter Beef Bites & Potatoes! Tender beef chunks are slow-cooked to perfection with garlic, butter, and a handful of simple ingredients. Paired with golden, roasted potatoes, this dish is a hearty, comforting meal that’s perfect for any day of the week.

Ingredients

Units Scale
  • 1.5 lbs (680g) beef stew meat (cut into bite-sized cubes)
  • 1 lb (450g) baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 6 garlic cloves, minced
  • 1 medium onion, finely diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/4 cup beef broth (or water)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the slow cooker: Place the cubed beef and halved potatoes into the slow cooker.
  2. Make the garlic butter: In a small bowl, combine the melted butter, minced garlic, diced onion, thyme, rosemary, paprika, salt, and pepper. Stir until well mixed.
  3. Coat the beef and potatoes: Pour the garlic butter mixture over the beef and potatoes in the slow cooker. Toss everything to coat evenly.
  4. Slow cook: Pour the beef broth over the mixture. Cover and cook on low for 6–8 hours, or until the beef is tender and the potatoes are cooked through.
  5. Serve: Garnish with fresh parsley, if desired. Serve hot and enjoy the comforting flavors!

Notes

  • For extra crispy potatoes, broil them for 3–4 minutes at the end of cooking time after removing the slow cooker lid.
  • You can add vegetables like carrots or bell peppers for added flavor and nutrition.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat gently to maintain the tenderness of the beef.
