Main Ingredients:

- 1.5 lbs beef chuck roast or stew meat, cut into 1-inch pieces
- 1 lb baby potatoes, halved (or quartered if large)
- 4 tbsp unsalted butter, melted
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1/4 cup beef broth
Seasonings:

- 1 tsp dried rosemary
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- Salt and pepper, to taste
Garnish:
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare Ingredients: Cut beef into pieces, halve potatoes, mince garlic, and chop parsley.
- Season Beef and Potatoes: In a bowl, mix melted butter, garlic, olive oil, thyme, rosemary, paprika, onion powder, salt, and pepper. Toss beef and potatoes in the mixture.
- Cook in Slow Cooker: Place beef and potatoes in the slow cooker, pour beef broth over them. Cover and cook on low for 6-8 hours.
- Serve: Garnish with fresh parsley before serving.

- For a richer sauce, add a splash of red wine or Worcestershire sauce.
