Description

Tender beef bites cooked in a flavorful garlic butter sauce with baby potatoes, herbs, and spices, all made in a slow cooker for a comforting and easy meal.

Main Ingredients:

    • 1.5 lbs beef chuck roast or stew meat, cut into 1-inch pieces
    • 1 lb baby potatoes, halved (or quartered if large)
    • 4 tbsp unsalted butter, melted
    • 4 garlic cloves, minced
    • 1 tbsp olive oil
    • 1/4 cup beef broth

Seasonings:

    • 1 tsp dried thyme
    • 1 tsp dried rosemary
    • 1 tsp smoked paprika
    • 1/2 tsp onion powder
    • Salt and pepper, to taste

Garnish:

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare Ingredients: Cut beef into pieces, halve potatoes, mince garlic, and chop parsley.
  2. Season Beef and Potatoes: In a bowl, mix melted butter, garlic, olive oil, thyme, rosemary, paprika, onion powder, salt, and pepper. Toss beef and potatoes in the mixture.
  3. Cook in Slow Cooker: Place beef and potatoes in the slow cooker, pour beef broth over them. Cover and cook on low for 6-8 hours.
  4. Serve: Garnish with fresh parsley before serving.

Notes

  • For a richer sauce, add a splash of red wine or Worcestershire sauce.
  • You can add veggies like carrots or bell peppers for more variety.
