  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes (packed in oil), chopped
  • 1 1/2 cups heavy cream
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved pasta water (optional)

Instructions

  • Cook the spaghetti
    Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Once cooked, reserve about 1 cup of pasta water and drain the rest. Set aside.
  • Make the sauce
    While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the garlic and sauté for about 1 minute, or until fragrant. Then, add the chopped sun-dried tomatoes and cook for another 2-3 minutes.
  • Add cream and spinach
    Pour in the heavy cream and bring it to a gentle simmer. Stir in the spinach and allow it to wilt down, about 2-3 minutes. Season with salt and pepper to taste.
  • Combine pasta and sauce
    Add the cooked spaghetti to the skillet with the sun-dried tomato cream sauce. Toss everything together, adding the reserved pasta water if needed to help thin out the sauce. Stir in the Parmesan cheese until the sauce is creamy and well-coated.
  • Serve
    Serve the pasta immediately, topped with additional Parmesan cheese and freshly ground pepper.

Notes

  • Feel free to add grilled chicken or shrimp to make this dish heartier.
  • If you prefer a dairy-free option, you can swap the heavy cream with coconut cream and use dairy-free cheese.
