Ingredients
– 4 boneless skinless chicken breasts, approximately 2 pounds – of 4 equally sized pieces
– 3 tablespoons olive oil, divided (2 tablespoons to make the seasoning blend and 1 tablespoon for sauteing the spinach)
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon smoked paprika
– 1/4 teaspoon garlic powder
– 1/4 teaspoon onion powder
– 1/2 cup yellow onion, small diced
– 2 teaspoons minced garlic
– 5 ounces fresh baby spinach, approximately 3 cups
– 4 ounces cream cheese, room temperature
– 1 cup shredded mozzarella cheese
– 1/2 cup grated parmesan cheese
Instructions
1. Preheat the oven to 375°F.
2. In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, and onion powder.
3. Rub the seasoning blend over the chicken breasts.
4. In a skillet, heat 1 tablespoon of olive oil and sauté the diced onion until translucent.
5. Add minced garlic and baby spinach, cooking until the spinach wilts.
6. Remove from heat and stir in cream cheese, mozzarella cheese, and parmesan cheese until well combined.
7. Cut a pocket into each chicken breast and stuff with the spinach mixture.
8. In the same skillet, heat the remaining olive oil and sear the chicken breasts on both sides.
9. Transfer the skillet to the oven and bake for about 25-30 minutes or until the chicken is cooked through.
