Instructions

Step 1: Cook the Chicken

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Season the chicken breasts or thighs with salt, pepper, garlic powder, onion powder, and dried thyme.
  3. Add the chicken to the skillet and cook for about 6–7 minutes per side (depending on thickness), until golden brown and cooked through. Remove from the skillet and set aside.

Step 2: Make the Gravy

  1. In the same skillet, melt 1 tablespoon of butter.
  2. Sprinkle the flour into the skillet, whisking to form a roux. Cook for 1–2 minutes to remove the raw flour taste.
  3. Gradually add the chicken broth, whisking constantly to avoid lumps. Once the mixture starts to thicken, stir in the heavy cream and continue whisking until smooth and thickened (about 3–4 minutes).
  4. Season the gravy with salt and pepper to taste.

Step 3: Make the Mashed Potatoes
