Instructions

Step 1: Make the Cheesecake Filling

  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Scoop small teaspoon-sized portions onto a parchment-lined baking sheet.
  3. Freeze for at least 30 minutes, until firm.

Step 2: Make the Cookie Dough

  1. In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  2. Mix in egg and vanilla extract until combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
