Instructions
Step 1: Make the Cheesecake Filling
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Scoop small teaspoon-sized portions onto a parchment-lined baking sheet.
- Freeze for at least 30 minutes, until firm.
Step 2: Make the Cookie Dough
- In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
- Mix in egg and vanilla extract until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients.
- Fold in crushed freeze-dried strawberries. Add pink food coloring if desired.
Step 3: Assemble the Cookies
- Scoop about 1 ½ tablespoons of cookie dough and flatten it in your palm.
