Description

This Street Corn Chicken Rice Bowl is a flavorful and satisfying dish that combines tender chicken, zesty street corn, and fragrant cilantro lime rice. It’s a delicious and easy meal that everyone will enjoy.


Ingredients

  • – 2 large chicken breasts, diced
  • – 1 tsp chili powder
  • – 1 tsp smoked paprika
  • – 1/2 tsp garlic powder
  • – 1/2 tsp cumin
  • – 1 tbsp olive oil
  • – Salt and pepper to taste
  • – 1 cup long-grain rice (cooked as per package instructions)
  • – Juice of 1 lime
  • – 2 tbsp chopped fresh cilantro
  • – 2 cups corn kernels (fresh, frozen, or canned)
  • – 1/4 cup mayonnaise
  • – 1/4 cup crumbled cotija cheese
  • – 1/2 tsp chili powder
  • – Juice of 1 lime
  • – Salt to taste
  • Optional Toppings:
  • – Diced avocado
  • – Chopped tomatoes
  • – Sliced jalapeños
  • – Extra cotija cheese

Instructions

1. In a bowl, mix diced chicken with chili powder, smoked paprika, garlic powder, cumin, olive oil, salt, and pepper. Let it marinate for at least 30 minutes.

2. Cook the marinated chicken in a skillet over medium heat until fully cooked and slightly browned.

3. In a separate bowl, mix cooked rice with lime juice and chopped cilantro.

4. In another bowl, combine corn kernels with mayonnaise, cotija cheese, chili powder, lime juice, and salt to make the street corn mixture.

5. To assemble the rice bowl, divide the cilantro lime rice among serving bowls, top with cooked chicken, and street corn mixture.

6. Add optional toppings like diced avocado, chopped tomatoes, sliced jalapeños, and extra cotija cheese.
