Instructions

  1. Activate the Yeast: In a small bowl, combine the warm water, sugar, and yeast. Stir until the sugar dissolves, then let it sit for about 5-10 minutes, until the mixture becomes foamy.
  2. Make the Dough: In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Stir until a dough forms. Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic.
  3. Let the Dough Rise: Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  4. Shape the Dough: Punch the dough down and divide it into 2 equal portions. Roll each portion into a long loaf about 8-10 inches long. Place the loaves onto a parchment-lined baking sheet.
  5. Add the Herb and Cheese Topping: Brush the tops of the loaves with melted butter. Sprinkle the dried oregano, basil, garlic powder, and onion powder evenly over the top. Press the shredded mozzarella and Parmesan cheese into the surface of the dough, pressing lightly to adhere.
  6. Second Rise: Let the dough rest and rise for another 20-30 minutes while the oven preheats to 375°F (190°C).
  7. Bake the Bread: Bake the loaves for 20-25 minutes, or until golden brown. The cheese will be melted, and the bread should sound hollow when tapped on the bottom.
