These Super Tender Crockpot Beef Short Ribs are a comforting and hearty dish that is perfect for a cozy dinner. The beef ribs are slow-cooked to perfection in a flavorful broth with vegetables, creating fall-off-the-bone tender meat that is packed with rich and savory flavors.

  • 3 Ibs Bone-In Beef Short Ribs
  • 3 cups Baby Carrots
  • 2 cups Mushrooms Sliced
  • 2 cups Beef Broth
  • 1 cup Red Wine (Optional- See Notes)
  • 2 tablespoon Tomato Paste
  • 3 tablespoon Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 tablespoon Garlic Minced
  • Salt To Taste
  • Pepper To Taste

Instructions

  1. Prepare the Ingredients: Season the beef short ribs with salt and pepper. In a large skillet, sear the ribs on all sides until browned. Transfer to the crockpot.
  2. Add the Vegetables and Broth: Add the baby carrots, sliced mushrooms, beef broth, red wine, tomato paste, butter, bay leaf, thyme, and minced garlic to the crockpot.
  3. Cooking: Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is tender.
  4. Serve: Remove the bay leaf and thyme sprigs before serving. Enjoy the super tender beef short ribs with the vegetables and sauce.

Notes

  • You can omit the red wine if preferred or replace it with additional beef broth for a non-alcoholic version.
  • For a thicker sauce, you can mix cornstarch with water and add it to the crockpot during the last hour of cooking.
