- 3 tbsp Rice vinegar
- 2 tbsp Sugar
- 2 tbsp Ketchup
- 2 cloves Garlic (minced)
- 1 Bell pepper (red or yellow, sliced)
- 1 Onion (sliced)
- 2 Green onions (chopped)
- 1 tbsp Sesame oil
- Optional add-ins: Tofu, chicken, or shrimp
Instructions
- Cook the Noodles: Cook noodles according to package instructions. Drain and toss with sesame oil to prevent sticking.
- Prepare the Veggies: Slice the bell pepper, onion, and green onions. Prepare your protein (tofu, chicken, or shrimp) if adding, and cook separately.
- Make the Sweet & Sour Sauce: In a bowl, mix soy sauce, rice vinegar, sugar, and ketchup. Stir until sugar dissolves.
- Sauté the Veggies: Heat sesame oil in a skillet or wok. Sauté garlic and onion for 2-3 minutes, then add bell pepper and cook for 2 more minutes.
- Combine Noodles & Sauce: Add noodles to the skillet, pour over the sauce, and toss to combine. Stir-fry for 2-3 minutes until noodles are evenly coated.
- Serve and Garnish: Serve in bowls, garnished with chopped green onions. Add sesame seeds or crushed peanuts for extra crunch if desired.
