- 1 medium Cauliflower (fresh or pre-riced)
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 Bell pepper, diced (red or yellow)
- 2 tsp Chili powder
- 1 tsp Cumin
- 1 tsp Paprika
- 1 can (14 oz) Diced tomatoes (canned or fresh)
- 1 cup Shredded cheddar cheese
- 1 tbsp Olive oil
- Fresh cilantro (for garnish)
- Lime (for garnish)
Instructions
- Sauté the Veggies: Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for another 1-2 minutes until fragrant.
- Cook the Ground Beef: Add ground beef (or turkey) to the skillet. Break apart with a spoon and cook for 5-7 minutes until browned and cooked through. Drain excess fat if necessary.
- Add the Spices: Stir in chili powder, cumin, and paprika. Cook for another minute until the spices are fragrant.
- Stir in the Cauliflower Rice: Add cauliflower rice to the skillet and mix with the beef and veggies. Cook for 5-7 minutes until cauliflower is tender.
- Add the Tomatoes: Stir in diced tomatoes with juices and simmer for 3-4 minutes to allow the flavors to combine.
- Melt the Cheese: Sprinkle shredded cheddar cheese over the mixture, cover the skillet, and cook for 2-3 minutes until the cheese melts.
- Serve and Garnish: Remove from heat and serve in bowls. Garnish with fresh cilantro and a squeeze of lime.
