Description

This Tex-Mex Beef Cauliflower Skillet is a healthy and delicious twist on classic Tex-Mex flavors. Packed with savory ground beef, spicy seasonings, and cheesy goodness, it’s lightened up with cauliflower rice for a low-carb version. Quick, easy, and all made in one skillet!


Ingredients

  • 1 medium Cauliflower (fresh or pre-riced)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 Bell pepper, diced (red or yellow)
  • 2 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 can (14 oz) Diced tomatoes (canned or fresh)
  • 1 cup Shredded cheddar cheese
  • 1 tbsp Olive oil
  • Fresh cilantro (for garnish)
  • Lime (for garnish)

Instructions

  1. Sauté the Veggies: Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for another 1-2 minutes until fragrant.
  2. Cook the Ground Beef: Add ground beef (or turkey) to the skillet. Break apart with a spoon and cook for 5-7 minutes until browned and cooked through. Drain excess fat if necessary.
  3. Add the Spices: Stir in chili powder, cumin, and paprika. Cook for another minute until the spices are fragrant.
  4. Stir in the Cauliflower Rice: Add cauliflower rice to the skillet and mix with the beef and veggies. Cook for 5-7 minutes until cauliflower is tender.
  5. Add the Tomatoes: Stir in diced tomatoes with juices and simmer for 3-4 minutes to allow the flavors to combine.
  6. Melt the Cheese: Sprinkle shredded cheddar cheese over the mixture, cover the skillet, and cook for 2-3 minutes until the cheese melts.
  7. Serve and Garnish: Remove from heat and serve in bowls. Garnish with fresh cilantro and a squeeze of lime.
