Description

A hearty and flavorful stew packed with beef smoked sausage, ground beef, beans, vegetables, and a blend of spices, perfect for a comforting meal on a chilly day.


Ingredients

– 12 ounces beef smoked sausage, sliced

– 1 pound lean ground beef

– 1 1/2 cups diced yellow onion

– 1 tablespoon minced garlic

– 3 cups diced russet potato

– 2 cups beef broth

– 1 1/2 cups frozen sweet yellow corn

– 1 1/2 cups frozen peas & carrots medley

– 31 ounces pinto beans

– 14.5 ounces stewed tomatoes

– 10 ounces Rotel diced tomatoes & green chilies

– 2 tablespoons chili powder

– 1 teaspoon ground cumin

– 1 teaspoon smoked paprika

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. In a large pot, cook the sausage and ground beef over medium heat until browned.

2. Add onion and garlic, cooking until softened.

3. Stir in potatoes, beef broth, corn, peas & carrots, pinto beans, stewed tomatoes, Rotel tomatoes, and spices.

4. Simmer for about 30 minutes until potatoes are tender.


Notes

  • – For a spicier version, add a diced jalapeño or hot sauce.
  • – Serve with a dollop of sour cream or shredded cheese on top.
