Description

This savory and aromatic dish combines tender chicken pieces with udon noodles and Thai basil leaves, all cooked in a flavorful sauce made with Chinese cooking wine, soy sauces, and sesame oil.

  • 3 tbsp Chinese cooking wine
  • 2 tbsp all-purpose soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp oil (for cooking)
  • 500 g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp freshly minced ginger
  • 1 tbsp freshly minced garlic
  • 450 g udon noodles, prepared as per the packet instructions
  • 2 firmly packed cups (100 g) Thai basil leaves

Instructions

  1. Prepare the sauce: In a small bowl, combine Chinese cooking wine, all-purpose soy sauce, dark soy sauce, brown sugar, and sesame oil. Set aside.
  2. Cook the chicken: Heat 2 tablespoons of oil in a large pan over medium-high heat. Add the bite-sized chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the pan and set it aside.
  3. Sauté the aromatics: In the same pan, add the minced ginger and garlic. Sauté for 1-2 minutes until fragrant and slightly golden.
  4. Combine with sauce: Pour in the prepared sauce mixture and bring it to a simmer. Cook for 2-3 minutes, allowing the flavors to meld.
  5. Cook the noodles: While the sauce simmers, cook the udon noodles according to package instructions. Drain and set aside.
  6. Add basil and chicken: Return the chicken to the pan along with the Thai basil leaves. Toss everything together, allowing the basil to wilt and infuse the dish with its flavor.
  7. Combine noodles: Add the cooked udon noodles to the pan and toss everything together to ensure the noodles are well coated with the sauce.
  8. Serve: Once everything is combined and heated through, serve hot. Optionally, garnish with additional basil or sliced chili peppers for extra flavor.
