- 1 block (14 oz) firm tofu, drained and pressed
- 1/2 cup grated carrots
- 1/2 cup chopped spinach (fresh or frozen, thawed)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs (use gluten-free breadcrumbs for a gluten-free option)
- 1/4 cup nutritional yeast (optional, for a cheesy flavor)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
Instructions
- In a large mixing bowl, crumble the pressed tofu into small pieces with your hands or a fork.
- Add the grated carrots, chopped spinach, onion, and garlic to the bowl, mixing well.
- Stir in the breadcrumbs, nutritional yeast, soy sauce, cumin, paprika, salt, and pepper. Mix until everything is well incorporated. If the mixture is too wet, add more breadcrumbs to reach a firm consistency.
- Divide the mixture into 6-8 equal portions and form each into a patty shape.
- Heat olive oil in a large skillet over medium heat.
- Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Once done, transfer the patties to a paper towel-lined plate to remove excess oil.
- Serve the patties with your favorite sauce, on a bun, or with a side of veggies.
Notes
- These patties can be baked instead of fried. To bake, preheat the oven to 375°F (190°C), place the patties on a lined baking sheet, and bake for 20-25 minutes, flipping halfway through.
- You can use other vegetables like zucchini, bell peppers, or mushrooms for a different flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or oven to maintain crispiness.
