Description

  • 8 slices of bacon (smoked or regular, depending on preference)
  • 6 large eggs
  • 1 cup milk or cream (heavy cream for extra richness)
  • 1 small onion, finely chopped
  • 1 9-inch pastry crust (store-bought or homemade)
  • 1 cup cheddar cheese (or cheese of choice)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: Fresh thyme or parsley (for seasoning)

Instructions

  1. Preheat the oven to 375°F (190°C). Roll out pastry dough to fit a 9-inch pie dish and prick the bottom with a fork. Pre-bake for 8-10 minutes until slightly set but not browned.
  2. Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and chop into small pieces.
  3. Sauté the onions in the same skillet for 3-5 minutes until soft and translucent.
  4. In a large bowl, whisk together eggs, milk or cream, salt, and pepper. Add optional herbs and grated cheese.
  5. Once the crust is pre-baked, layer the bacon pieces and sautéed onions evenly in the pie crust. Pour the egg mixture over the top.
  6. Bake for 30-35 minutes or until the filling is set and golden brown. Check for doneness by inserting a knife into the center.
  7. Let the pie cool for 10 minutes before slicing and serving.

  • For a creamier filling, use a combination of eggs and heavy cream instead of milk.
