Description

A comforting Italian-inspired soup filled with tender potatoes, savory sausage, kale, and a creamy broth. Perfect for chilly nights or when you need a satisfying, hearty meal.


Ingredients

  • 1 lb Italian sausage (spicy or mild, depending on preference)
  • 45 medium potatoes (Yukon Gold or Russet)
  • 4 cups kale (or spinach as an alternative)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Olive oil (for sautéing)
  • Salt and pepper (to taste)

Instructions

  1. Brown the Sausage
    Heat a large pot or Dutch oven over medium heat. Remove the casing from the Italian sausage and crumble it into the pot. Brown the sausage for 6-8 minutes until crispy. Remove and set aside.
  2. Sauté the Vegetables
    In the same pot, add olive oil if needed. Sauté the chopped onion for 5 minutes until softened, then add the minced garlic and cook for 1 more minute.
  3. Add the Potatoes and Broth
    Add sliced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 10-12 minutes until the potatoes are fork-tender.
  4. Add the Kale and Sausage
    Add the browned sausage and chopped kale (or spinach) to the pot. Cook for 5 more minutes until the kale wilts.
  5. Make It Creamy
    Pour in the heavy cream and stir well. Let the soup simmer for another 2-3 minutes to meld the flavors. Adjust seasoning with salt and pepper.
  6. Serve and Enjoy!
    Ladle into bowls and garnish with freshly grated Parmesan cheese, if desired. Serve with crusty bread for dipping.
