- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream

Instructions
- Brown the Sausage
Heat a large pot or Dutch oven over medium heat. Remove the casing from the Italian sausage and crumble it into the pot. Brown the sausage for 6-8 minutes until crispy. Remove and set aside. - Sauté the Vegetables
In the same pot, add olive oil if needed. Sauté the chopped onion for 5 minutes until softened, then add the minced garlic and cook for 1 more minute. - Add the Potatoes and Broth
Add sliced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 10-12 minutes until the potatoes are fork-tender. - Add the Kale and Sausage
Add the browned sausage and chopped kale (or spinach) to the pot. Cook for 5 more minutes until the kale wilts. - Make It Creamy
Pour in the heavy cream and stir well. Let the soup simmer for another 2-3 minutes to meld the flavors. Adjust seasoning with salt and pepper. - Serve and Enjoy!
Ladle into bowls and garnish with freshly grated Parmesan cheese, if desired. Serve with crusty bread for dipping.
